PLUM CAKE

 SUMMER PLUM CAKE

What a great recipe for a moist cake that satisfies morning, noon and night! It can be made with most fruits or berries but we have found in my family that in the fall we use apples and in the summer it is plums. This summer one of my favorite treats has been a slice of this plum cake cold from the fridge in the morning as a breakfast bite…..it is just beautiful!

INGREDIENTS: PLUMS PEELED PITTED……1 STICK BUTTER, MELTED……1 CUP SUGAR……2 EGGS……DASH OF ALMOND EXTRACT OR VANILLA…..1 CUP FLOUR

  1. LINE CAKE PAN WITH PARCHMENT AND GREASE WITH BUTTER

  2. FILL BOTTOM OF CAKE PAN WITH PEELED PITTED AND SLICED PLUMS, SPRINKLE PLUMS WITH SUGAR

  3. MELT 1 STICK BUTTER IN A POT ON THE STOVE

  4. ADD 1 CUP SUGAR TO MELTED BUTTER AND STIR

  5. ADD 2 EGGS, ONE AT A TIME AND MIX

  6. ADD A DASH OF ALMOND EXTRACT OR VANILLA OR BOTH

  7. ADD 1 CUP OF FLOUR AND MIX

  8. POOR BATTER OVER PLUMS

  9. SPRINKLE SUGAR OVER TOP OF CAKE

  10. BAKE AT 350 DEGREES F UNTIL TOP BROWNED AND WHEN PIERCED WITH A KNIFE THE KNIFE COME OUT CLEAN….ROUGHLY 30-40 MINUTES
