Naan

an easy flatbread recipe in three parts: Three days from start to finish, but don’t let that deter you from diving in and whipping up some of your own naan…….the formula is easy and the process quick….it takes three days for proper fermentation and good flavor!

part one

Mix together the wets and the dries in a mixing bowl or in a mixer with a dough hook attachment. Transfer to table to knead for 8-10 minutes or until the dough is supple, not sticky but well developed. Put in lightly oiled bowl, cover and let rest for two hours at room temperature. Plastic wrap bowl and put in refrigerator overnight.

Part two: shaping 12 rounds of dough


Remove dough from fridge and let warm slightly. Put dough on table and scale to 150 grams. This will give you roughly 12 pieces of dough. Shape into a round boule shape. Follow video for quick shaping tutorial. Line a sheet tray with parchment and place dough rounds on tray. Plastic wrap and put back into the refrigerator overnight.

 

Part three: Rolling and baking

Remove dough rounds from fridge. Set up a pan on the stove to warm over high heat when ready. Roll out a piece of dough with a rolling pin making sure that it is thin but not sticking to the table. I often roll and flip and roll and flip. Follow tutorial in video for how to roll out. Place rolled dough in the hot pan and cook until dough starts to bubble and brown up on the bottom side. Flip and cook other side before pulling from heat and placing naan onto a plate or board. Brush naan with oil or melted butter with garlic for a nice finish. And coarse salt to taste.

A BASIC MARINADE FOR CHICKEN BREAST

Chopped garlic

Heavy dash soy sauce

Heavy dash rice vinegar

A few glugs of sesame oil

A heavy dash of olive oil

Coarse sea salt

Pepper

Fresh Thyme leaves

OR ANOTHER MORE BASIC OPTION

Lime juice

Olive oil

salt and pepper

and herbs

LET CHICKEN MARINATE OVERNIGHT

AND GRILL OFF THE NEXT DAY FOR A FLAVORFUL CHICKEN BREAST TO ADD TO YOUR SUMMER CAESAR WRAP

INGREDIENTS

1 garlic clove chopped…….pinch of salt…..1 large egg yolk….2 tablespoon lemon juice…..3/4 teaspoon seedy dijon mustard……1/4 cup plus 2 tablespoons vegetable oil….3 tablespoons grated parmesan

Whisk together the dijon mustard, egg yolk and lemon juice. Add very slowly the 2 tablespoons of vegetable oil, whisking constantly. Gradually add the remaining 1/4 cup vegetable oil, while you keep whisking, until the mixture has thickened and resembles mayonnaise. Add a dash of water until consistency is like cream. Whisk in the parmesan cheese.

SOURDOUGH CROUTON RECIPE UNDER SALAD STAPLES IN THE RECIPE SECTION

AND DON’T FORGET PARMESAN CHEESE!

PILE AND WRAP……AND ROLL

Mix the salt in a bowl…..lettuce, sprouts, kalamata olives, cherry tomatoes, croutons, parmesan cheese. Dress with your homemade caesar dressing. Pile onto your naan and nestle some sliced grilled chicken right there in the middle. Wrap it, roll it in parchment and you are on your way to a good summer time!
