COOKIES FOR YOUR LOVER

Ingredients:

3/4 pound butter: or 3 sticks……softened

1 3/4 cup powdered sugar…..only 1 cup is used in the dough…..the rest is for dusting cookies after bake

1 egg

2 cups flour

1 cup cornstarch

2 cups shelled walnuts…..chopped fine

1/2 cup raspberry jam

dough process:

Cream the butter and 1 cup of the powdered sugar together in a mixer until light and fluffy. Add the egg. Sift together the flour and the cornstarch and add to the butter and sugar mixture. Add the walnuts. Gather dough into a ball and wrap in parchment paper. Chill in the refrigerator for 4-6 hours.

Roll and Cut

Once chilled, roll dough out on a floured table. Roll until dough is roughly 1/4 inch thick. Using a heart shaped cookie cutter about 1 1/2 inch long, cut out the cookies and place them on a cookie sheet lined with parchment. Chill cookies for another 30-45 minutes.

Preheat oven to 325 degree F

Bake cookies for 10-15 minutes or until they are evenly and lightly browned. Remove from oven and cool on a wire rack.

Assemble cookies while warm. Spread a layer of raspberry jam on the bottom of a cookie and sandwich together with a second cookie. Repeat until all cookies are jammed and sandwiched. Powder them with the extra powdered sugar. Viola……you are done!
