 BLUEBERRY PIE TO THE SKY

July is for pie and blueberry is easy. Here is a from scratch country recipe that will make you swoon with each bite. And please, for goodness sake, serve it with a scoop of vanilla ice cream!

RECIPE IN TWO PARTS

PART ONE: THE PIE DOUGH

Ingredients: 5 cups flour….1 pound cold butter……1 cup cold water…….1 1/2 teaspoon salt…….This makes enough dough for two pies, tops and bottoms……chill over night

 

part two: blueberry pie

1. Roll out chilled pie dough and line pie dish

Cut your pie dough into four equal parts. For this pie we will use only two pieces. Use a stencil if you wish to cut a round from the rolled dough…..add roughly 1 1/2 inch to the circle to account for folding and crimping edges. Fork the bottom of the shell once you’ve line the dish. Roll out a second dough for a top…..get creative….lattice or cookie cutter stars for artistic embellishments. Chill your pie shell and top layer.

2. Make blueberry filling and fill shell

8 cups blueberries…….crush at least one handful into the bowl with the rest of the blueberries. 1/2 cup sugar…..1/4 cup cornstarch……1 tablespoon of fresh squeezed lemon juice. Mix with hands and fill pie shell with a heaping mound of berries. Top with 5 or 6 dollops of butter.

 

3. Top your pie

Do your dandy crafts work on a beautiful pie top. Chill your put together pie for another 30 minutes. Mix 1 egg yolk with 2 tablespoons heavy cream……brush the top of your pie with the mixture……sprinkle with sugar.

4. bake youR pie

Preheat oven to 400 degrees F while your pie is chilling. Bake for 20 minutes at 400 before dropping temp to 350 degrees F. Bake for another 40-50 minutes. If it is browning too much and still not done then you can cover it with tin foil and keep baking.

 

5. Let your pie cool and set

This image is of pie directly from the oven……tastes soooo good hot but it has not had enough time to set. Up to you how you eat it really. With the cold vanilla icecream it is quite a dream.

6. a well set blueberry pie

Easier to slice and keep in that perfect pie slice when you let the pie cool and set properly. Ice cream or whip cream to accompany the pie is preferred although you can just as well eat it straight up by itself. It is really so good.
